Beet Hummus with Lavosh Crackers and Cashew Sour Cream

This was a dish I did for my final presentation of the Fundamentals of Plant-Based Cooking with Plantlab Culinary. I love beetroot and hummus so thought I would combine them both!  The lavosh bread crackers were also a bit of a treat.  This was super easy to make and looked fabulous!  You can make the lavosh, roast the beetroot and soak the cashews all the day before.


Roasted Beet Hummus

2 medium-sized beets skin on

1 can cannellini beans & 1 can chickpeas

2 ½ tablespoons of tahini

2 cloves garlic

1 tablespoon lemon juice

½ teaspoon salt

½ teaspoon cum

Cumin as needed

Preheat oven to 200 degrees. Oil and salt beets and roast them until tender.

Once beetroot has cooled peel the skin and chop into chunks

Place the beetroot, beans, chickpeas and garlic in food processor and blend. Add tahini, lemon juice, salt, cumin and dash of water and process until mixture is smooth.

Adjust seasonings and water as needed

Toast a handful of pistachios and crush

Cashew Sour Cream

½ cup of cashews – soaked overnight

1/3 cup water

1 tablespoon lemon juice

1 teaspoon apple cider vinegar

Smidge of salt

Soak cashews overnight in water

Place cashews, water, lemon, vinegar and salt in a blender and blend until super smooth.

Lavosh Bread Crackers

1 cup plain flour

2 tablespoons of black sesame seeds

2 tablespoons of white sesame seeds

1 teaspoon of dried oregano

Smidge of salt

¼ cup olive oil

¼ – ½ cup water

Sea Salt and Olive oil and sesame seeds to finish

Preheat oven to 180 degrees Celsius and line a tray with baking paper

In a bowl mix the flour, sesame seeds, dried oregano and salt.

Mix the oil and water together and add to the dry ingredients. Stir to form a soft dough.

Roll out dough as thinly as possible.

Cut into shapes with a pizza wheel. Transfer to a baking tray, brush lightly with oil and sprinkle lightly with salt and sesame seeds.  Bake until crisp and golden.  Allow to cool then store until needed in airtight container.
