Blueberry Pancakes

I love Sundays. The kids and I came to an agreement a few months ago that Sundays would now involve a sleep in. It has taken me a little while to get used to it, but I love it now. It is such a decadent luxury for me and I look forward to it all week! Joy can be found in the smallest of things. Before we hit a dirt road today I made the kids blueberry pancakes. Sundays are made for pancakes. Even though Rissie is not a fan of fruit in anything, she is a big fan of pancakes, so she put her dislike of fruit aside for a perfect Sunday brunch with my little tribe.
Blueberry Pancakes
Enough for 4 generous serves
2 cups of plain flour
2 tablespoons of baking powder
2 cups of almond milk
4 tablespoons of olive oil
4 tablespoons of maple syrup
2 teaspoons of vanilla essence
2 cups blueberries
Mix all ingredients in a bowl and allow to sit for 10 minutes.
Add the blueberries and gently mix to ensure evenly distributed in the batter.
Grease a fry pan with olive oil and cook in batches of 2 – 3 pancakes.
Serve with maple syrup, blueberries, banana etc
