Chocolate & Peanut Butter Brownies



I got the loveliest message from one of my customers me today about my Chocolate & Peanut Butter Swirl Brownies - "Can I get another brownie please - we love it. The brownie is amazing - never tasted one so good!"


Such a treat to get a message like that - it made my day.


It is also one of Al's favourite treats when he is here and the kids love it. For those of you who live too far away to order Brownies via my Feast Catering, here is the recipe. It is simply too wonderful not to share.

Chocolate & Peanut Butter Swirl Gluten-Free Brownies

1 1/2 cup of gluten-free self-raising flour

2/3 cup cacao powder

2 cup caster sugar

Smidge of salt

1/2 cup flaked almonds

1 cup almond milk

1/2 cup olive oil

6 tablespoons of peanut butter

Line a square tin – 8 x 8 inches and preheat oven to 160 degrees Celsius

Combine all dry ingredients in a bowl.

Combine all wet ingredients (apart from peanut butter in a jug)

Pour the wet ingredients into the bowl with dry ingredients and mix to combine.

Add the brownie mixture to the tin and evenly distribute with a spatula.  Then dollop the 6 tablespoons of peanut butter randomly over the top of the mixture and then run a skewer through the dollops to distribute and create a marble texture.

Cook for 60 minutes.

Allow to cool completely before removing from tin and cutting into 16 squares.
