Chocolate & Peppermint Cupcakes – so good do not need frosting!

Between work, study and all the animals it has been hard to find time to make something, just because! Today I had promised the kids we would head to the Lake so while they were at Nanna’s house I whipped up a batch of chocolate cakes. I thought I would try some peppermint essential oil to turn these cupcakes into something a little bit special. Be warned, this is the easiest chocolate cake recipe in the world!
Chocolate & Peppermint Cupcakes
420-gram plain flour (all-purpose flour)
400-gram caster sugar
75-gram Cacao powder
2 teaspoon Bicarb of Soda
500 ml water
190 ml Olive oil
2 Tablespoon Balsamic Vinegar
6 drops peppermint essential oil
Preheat oven to 180 degrees fan forced oven
Put cupcake wrappers in cupcake tin
Mix dry ingredients together and sift
Mix wet ingredients together
Combine dry and wet ingredients and mix thoroughly for two minutes
Be warned mixture will be very wet – easiest to have a jug to pour into cases
Bake for 10 – 15 minutes until a skewer comes out clean.
