Cinnamon Sugar & Olive Oil Cookies

Archie loves cinnamon and he asked me a little while ago if the next time I made a batch I could do a cinnamon version.

Cinnamon Sugar & Olive Oil Cookies. 200-gram caster sugar 300 gram all-purpose or plain flour 2 teaspoon baking powder 150 ml olive oil 5 drops of Cinnamon Essential oil 6 Tablespoons of Almond Milk.

2 apples – to be thinly sliced and a shape cut out for topping

Cinnamon Sugar for topping:

¼ cup caster sugar 1 teaspoon ground cinnamon

Preheat oven to 180 degrees Celsius and line a tray with baking paper

For topping:

Combine caster sugar and ground cinnamon for cinnamon sugar Cut out shapes of thinly sliced apple

For biscuits Mix together the dry ingredients and the wet ingredients separately. Combine and beat slowly until mixture forms a dough. Form into balls – about a heaped teaspoons worth.

(Keep in mind that this mixture is quite crumbly, just gently press together and roll into a ball and you will find the heat of your hands will bring it all together.) Flatten with a fork dipped into the cinnamon sugar. Top each biscuit with a piece of apple. Sprinkle cinnamon sugar on each biscuit. Bake for about 10 minutes until biscuits become golden brown around the edges. Rest on a cooling tray.
