Coronation Chickpea Sandwich

When I lived in England many years ago, I fell in love with the Coronation Chicken Sandwich. It was a divine delicious treat. So when the kids were away recently, I was too lazy to go to the supermarket. I had tins of chickpeas in the cupboard, which inspired me to get inventive. This sandwich is my version of a Coronation Chickpea Sandwich, and it was scrummylicious.

Coronation Chickpea Sandwich

Enough filling for 6 sandwiches

1 cup raw cashew nuts – soaked for at least 4 hours

½ Spanish onion – finely diced

¼ cup sultanas

1 can chickpeas – drained

½ cup water

2 tablespoons mango chutney

½ tablespoon curry powder

Salt and pepper to taste


A loaf of your favourite bread

1. Mash the drained chickpeas roughly with a fork and put in a bowl

2. Add sultanas and diced onion

3. Blend the drained cashew nuts with water and curry powder into a smooth cream

4. Add the cashew cream to the chickpeas and mango chutney and mix

5. Season with salt and pepper

6. Lay out slices of your bread, top with rocket and the chickpea filling.
