Easy Breakfast Parfait

Now that spring is in the air and the days are getting longer, I am starting to crave different things. The fire is out, and I even had the backdoor open today. Admittedly it takes a while for the cottage to warm up, so, until midday, I was still wearing a fleece and a beanie! But it feels like spring!!!

In celebration of the new early morning light and the warmer days, I decided to make something scrummy for breakfast. This breakfast parfait is so easy. The Chia Fresca is enough for two, and the nut crumb is enough for several serves. Keep in an air-tight container, and you can always sprinkle on your porridge, ice-cream on top of smoothies, etc.!



Easy Breakfast Parfait

Chia Fresca:

¼ cup chia seeds

1 cup almond milk

2 tablespoons maple syrup

Combine all ingredients in a jar and shake to combine.

Allow at least 15 minutes for chia seeds to absorb almond milk.

A great option is making it the night before.

Simple nut crumb:

1 cup raw almonds

1 cup raw walnuts

1 cup dried pitted dates

2 tablespoons brown sugar

Combine all ingredients in a food processor and process until a chunky crumb forms.

To create the parfait, layer the chia fresca with the simple nut crumb and top with your favourite fruits that are in season.
