Lemon Cake with Lemon Icing

Archie, Rissie, and I loved the passionfruit cake so much that I had to make another cake the next day. As my beautiful Pa Jack Lemon Tree is heavily laden with the most beautiful bush lemons I thought I would make a lemon version. I am a complete sucker when it comes to anything citrus, and my favourite citrus is lemon.

I am head over heels in love with this cake recipe. It is super easy, uses one bowl and I also love mixing it by hand rather than using my mix-master. It makes me feel like a little Aussie Betty Crocker, especially with the log fire burning in my kitchen.

Lemon Cake with Lemon Icing:

Lemon Cake:


2 ½ cups self-raising flour

1 cup caster sugar

1 teaspoon baking powder

3 teaspoons apple cider vinegar

¾ cup almond milk

½ cup olive oil

¼ cup water

170ml lemon juice

Line an 8-inch round cake tin with baking paper.

Preheat fan-forced oven to 180-degrees Celsius.

Mix the dry ingredients in a bowl.

Add the wet ingredients to the centre.

Mix with a wooden spoon or whisk until combined.

Bake in the oven for 50 minutes.

Allow to cool on wire rack.

Lemon icing

80ml lemon juice

2 ½ cups icing sugar

Combine juice and icing sugar in a bowl to create icing. I like to start with the juice and gradually add the icing sugar until it is the consistency I want.

Ice cake and finish off with a little lemon zest.
