Orange Cake with Orange Icing

I suspect this cake is my new favourite cake recipe. Last week during the final week of the school holidays I made three cakes which the kids demolished – a passionfruit, lemon and this orange cake. Then, when we were away in the van, I made another passionfruit cake, which was divine!

I love the fact that I can mix this cake by hand, that it only uses one bowl, and that it doesn’t really need icing. Obviously, it is lovely with icing as well, below is a super easy icing recipe. Just replace the orange juice with passionfruit pulp (170 gm) or lemon juice for the other versions I have made so far. I shall have to try a vanilla cake next!

I am heading to Roma tomorrow for the weekend with Rissie for a netball carnival, so I am going to make a cake which we can split in half. One half for snacks on the bus, one half for Archie who will be staying at home with Nanna and the dogs - I suspect Archie will need cheering up once he finds out that all soccer games have been cancelled due to the rain!

Orange Cake with Orange Icing

Orange Cake:


2 ½ cups self-raising flour

1 cup caster sugar

1 teaspoon baking powder

3 teaspoons apple cider vinegar

¾ cup almond milk

½ cup olive oil

¼ cup water

170ml orange juice

Line an 8-inch round cake tin with baking paper.

Preheat fan-forced oven to 180-degrees Celsius.

Mix the dry ingredients in a bowl.

Add the wet ingredients to the centre.

Mix with a wooden spoon or whisk until combined.

Bake in the oven for 50 minutes.

Allow to cool on wire rack.

Orange icing

80ml orange juice

2 ½ cups icing sugar

Combine juice and icing sugar in a bowl to create icing. I like to start with the juice and gradually add the icing sugar until it is the consistency I want.

Ice cake and finish off with a little orange zest.
