Peanut Maple Balls

I am in love with peanuts at the moment. Salted roasted peanuts have become our weekend treat. We go completely wild and have Friday night pizza nights, then splash out and share a bag of roasted peanuts on a Saturday night. I tell you, it is non-stop in our little cottage. As I was snacking on Saturday night, I was wondering if the salted peanuts would be a nice addition to a sweet peanut bliss ball. This recipe is the result of my wonderings, and it was a winning combination!
I used the incredible house-made Peanut Butter I get from Bec at Tenterfield Health, so these were a decadent little mouthful.

Peanut Maple Balls
A decadent little peanut mouthful with a delectable salty crumb.
Servings: 20 balls
Ingredients
1 cup peanut butter
1/2 cup maple syrup
2 cups almond meal
1/2 cup roasted salted peanuts
Instructions
Whiz the roasted peanuts into a crumb in a food processor
Combine peanut butter, maple syrup and almond meal in a bowl and mix until well combined. (I used a mix-master to make sure it was all evenly combined).
Roll into balls and then roll balls into peanut crumb
Keep in the fridge
