Spring Caprese Salad

This is a super simple but ultra-delicious pasta salad that is perfect for a shared table. It takes no time to put together, so you don’t have to worry about being stuck in the kitchen and it is a lovely dish to share with friends and family. Great for when you need to take a dish to share.

Spring Caprese Salad

600-gram pasta

1-kilogram cherry tomatoes – halved

265-gram capers

Bulb of garlic, peeled and thinly sliced

1 teaspoon chilli flakes

1 cup olive oil

Large handful of basil

Juice of one lemon

Combine tomatoes, capers, basil, and lemon juice in a bowl.

Heat water to boiling and add pasta and cook to al dente

Heat oil to medium and gently cook garlic and chilli flakes for about 10 minutes, making sure not to burn the garlic.

Add garlic oil to the tomato mixture, and make sure to combine well.

Once pasta is cooked, drain, and add tomatoes to pasta.

Toss well and place in a serving bowl.
